One of the world's oldest cereal grain Millet is believed to be the first domesticated cereal grain. Today it feeds over one-third of the world's population! While millet grains are tiny in physical size, they're big on nutrition. Millet is alkaline, so it helps to balance acidity in the body while supplying protein, essential amino acids and dietary fiber. Millet is also a source of manganese, phosphorus and magnesium.
Millet can be used in many different ways, it can add a nutty taste and texture to bread, combined with other grains served as a pilaf or stuffing, cook it into a creamy breakfast cereal, or try it sprinkled on top of salads as a crunchy topping.

Prep Instructions:
To prepare as a cereal, bring 1/2 cup water to boil. Add 1/4 cup millet. Return to a boil, reduce heat to a simmer, cover and cook for 20 minutes or until tender. Drain off any remaining water. Millet can be used as a side dish and can also be added to soups, salads or casseroles. You can add the optional step of toasting it with oil in a heavy bottomed pan until golden before adding the boiling
liquid to give it a nuttier flavour.
